Remove the poetry dependency restriction from pyproject.toml

We cannot express the poetry version in pyproject.toml
when poetry is installed in a separate environment.
This causes poetry to be installed into the project environment,
which may cause problems with disabled plugins
(recently observed in wax!68)
and dependency conflicts between poetry and the project (helpy here).
