Change default logging config to append to the existing log instead of truncating the old log at startup

requires: hive!1236 (merged) to be merged as well.

Marked as Draft because this adds unrelated commits to the hive submodule that had already been merged to develop; review whether they're ok for HAF before merging this.

Hive CI is not passing for the new builds, but it's also not passing for develop right now, and it was a few days ago, so I'm not sure if this is a real error or just CI being weird
